A YOUNG CHEESE LIKE FETA SHOULD BE FRESH, TANGY, SLIGHTLY SALTY WITH NO AFTERTASTE. BLUE-VEINED CHEESES TYPICALLY ARE AGED, ARE SHARPER, PUNGENT, SALTY, AND HAVE A PLEASANT AFTERTASE. GOAT CHEESE IS EARTHY AND HERBAL.

FETA IS TYPICALLY OFF-WHITE WHILE GOAT CHEESE CAN BE WHITE TO OFF-WHITE.  BLUE CHEESE HAS THE CHARACTERISTIC BLUE VEINING WHILE GORGONZOLA EXHIBITS BLUE & GREEN VEINING.  PLEASE REFER TO THE COLOR CHART FOR DETAIL.
